Growing up this was easily one of my favorites, unfortunately when I married Roy & first made it for him he hated it & I couldn’t understand why. He likes beef, he likes potatoes, there isn’t that much veggies in it so what’s the problem? Needless to say I didn’t bother making it again….
At least that was up until a few years later when he came home from a friend’s one evening exclaiming that his friend’s wife had made the Sheppard’s Pie for dinner & it was awesome! I was so excited to hear that he liked it & asked him to get the recipe from them so that I could try to recreate this Sheppard’s Pie that he actually liked so that I could once again enjoy it’s deliciousness also. What I discovered in comparing the recipes was that my original Sheppard’s Pie was more of meatloaf style & dry, whereas their Sheppard’s Pie was far more flavorful & had a gravy consistency added to it.
While I was at my gramma’s over the Christmas holiday I went on & made her some of this too. She was quite thrilled with it also so I photographed it & now share it’s deliciousness with you.
SHEPPARD’S PIE
Ingredients You’ll Need:
* 1lb Ground Beef
* 1/2 White Onion
* 1 Cup Frozen Mixed Veggies
* 1 Can Cream of Mushroom Soup
* 4 Potatoes
* 1 Tablespoon Minced Garlic
* 1/2 Teaspoon Salt x 2
* A few twists of pepper
* 1/4 Cup Sour Cream
* 1/4 Cup Milk
* 1/4 Cup Shredded Cheddar (optional)
What To Do:
* Preheat oven to 400
* Slice & boil potatoes, then mash with Sour Cream, Milk, 1/2 Teaspoon Salt & a few twists of pepper
* While potatoes are boiling, Saute onions until golden then add ground beef & cook until browned
* Add 1/2 Teaspoon Salt, a few more twists of Pepper, Garlic, Cream of Mushroom Soup & Frozen Mixed Veggies, stir until combined
* Pour mixture into a medium casserole dish and even out
* Cover Beef Mixture with Mashed Potatoes and smooth so it’s all even
* Sprinkle Shredded Cheese on top (optional)
* Bake for 25 minutes covered with a lid or foil, then 5 minutes uncovered to slightly brown the cheese & potato top
